Recipe: Healthy Mexi-bowl

Without a doubt, my all-time favorite kind of cuisine is Mexican. I could eat it all day, every day — but what holds me back is its (low) nutritional value! We all know that most Mexican dishes are not the healthiest, and leave you feeling bloated from ingredients that are heavy and high in sodium.

Here’s a Mexican bowl that’s both healthy and will make your stomach feel satisfied in the right way. It’s loaded with diced red peppers (hello vitamin C), black beans (fiber), chicken (protein), kale (antioxidants), riced cauliflower (fights inflammation), and cilantro (calcium)!



  • Riced cauliflower: cook in avocado oil for 5-10 minutes
  • Diced red peppers
  • Black beans: I throw them in the microwave for 3 minutes
  • Kale: raw or steamed
  • Chicken breast: cook in avocado oil for 5-10 minutes
  • Cilantro
  • Crushed chili pepper or salsa to taste

Cook time is less than 15 minutes! The one thing I’d recommend adding is avocado or homemade guacamole. I was out of avocados when I made this and would’ve added ’em if I had ’em.
